Welcome TOA, it's our first day in San Diego. Please come visit us, enjoy cappuccino, latte, espresso, panini, lasagna, eventually beer and wine.
Well, actually we moved to the United States because we think it's an important market. California is an important market inside the United States. We were going to move to Manhattan but at the end this is just a mix between my personal life and the job. I wanted to move to California. I came down to LA, then La Jolla, then Gaslamp, and at the end I just settled down at Del Mar. We were looking for a place that was ready for this kind of business.
We have a new look. It's not the football—the soccer t-shirt hanging on the wall or the Italy flag that you see. It's a different Italy. But we have a good product, we have good coffee. That's the only reason why we decided to come down here. Hillcrest was ready for us and I think it's going to be the best pilot example.
I'm not wearing a suit and I'm smoking. Cafaro has been roasting coffee since 1882. This is why we have the logo—it's 130 years roasting coffee, making experience. We roast coffee. Italians, what they do is they mix their beans. We buy beans from every part of the world and we roast them separately in small batches, very slowly, and at the end we mix them together—a unique product. We have 12 to 15 types of different coffees and in here we have just three.
The uniqueness of the product is that we try that the bean doesn't get any oxygen. The grinder works on demand—we just grind the coffee in the moment it is requested to make a coffee. The coffee machine is special, so in 27 seconds you will get a perfect espresso. And all these techniques, all this procedure, the quality of the bean, the right mix of the beans, and the job that the staff is doing here—they have been trained by an Italian trainer that came from Cafaro to make our coffee unique.
Vergnano wants to be an authentic Italian bar. What you call a coffee shop, we call it a bar in the United States. As soon as you step in, the personnel is going to say 'Buongiorno.' You can have your coffee just standing by the bar—just drink your espresso and leave, as many Italians around here do. Or you can just sit down and socialize. We don't have Wi-Fi. We want people to talk to each other.
If you would have come here on Mother's Day, this was a mess—a nice mess—because everybody was talking, screaming babies all around. Well, of course we do have some business meetings. It's a nice place to stay here, it's very quiet. But we really want people to enjoy it. When you get out, you need to feel 'I felt good. I don't know why but I need to go back there because I felt good for what I eat, for the coffee I had, and for the moment I've been passing.' The lights, the music, the seating area—everything has been taken care of so you enjoy your moment here while you are here.
This is the best place to drink a coffee in all the United States. You need to come to San Diego. We'll be right here waiting for you—the best coffee, the best paninis, the best ambiance, the best owner, the best everything!
