At some point I went down to Lockhart, Texas, which is known as the barbecue capital of the world. My first experience was at Blacks, which is over 100 years old. I had a bite of a beef rib. These beef ribs are seasoned with just salt and pepper, no barbecue sauce. I took a bite and it was a head-popping moment. I can literally remember it. I was like, 'Wow, it's so different from anything I'd ever had.' That is literally the moment I fell in love with barbecue.
